These images are from just outside the City of Oaxaca, including at Monte Albán, the amazing pre-Columbian archaeological site (6-miles west of the City of Oaxaca), and several traditional palenque - palenque’s are artisan mezcal production sites where the agave hearts, a.k.a. ‘piñas’, are roasted, then volcanic stone crushed, then barrel fermented, then double distilled, in the Tiacolula Valley and San Juan del Rio.
